Kastike, joka kruunaa salaatin

Ranskalaisen salaattikastikkeen valmistus on se taito, joka kannattaa oppia. Ja jos täytyisi veikata, kuinka monta kertaa meiltä on kysytty miten ranskalainen salaattikastike tehdään ja mikä on Stefin tekemän salaattikastikkeen salaisuus, niin en valehtele paljon sanoessani yli sata kertaa. Ranskalainen salaattikastike tehdään aina kotona ja hieman ennen salaattiin lisäämistä. Siksi emme myy kastiketta pullotettuna, vaan tarjoilemme sen aina tuoreena. Jokaisella kokilla on Ranskassa omat tapansa ja salaisuutensa tehdä salaattikastike ja tässä jaamme Stefin salaisen reseptin. 


Näin teet ranskalaisen salaattikastikkeen?

Aloita lisäämällä kulhoon reilu ruokalusikallinen Dijon-sinappia, jonka jälkeen lisäät noin viisi ruokalusikallista oliiviöljyä.

Tämän jälkeen lisää mukaan hyppysellinen suolaa ja pippuria. Lopuksi lisää mukaan vajaa teelusikallinen viinietikkaa ja sekoita aineet keskenään.

 

 

Anna salaattikastikkeen seisoa noin 15 minuuttia ja sekoita. Voilà salaattikastike on valmis. Voit sekoittaa salaattikastikkeen salaatin joukkoon valmiiksi tai tarjoilla sen erillisestä astiasta. Koska kastikkeessa on Dijon-sinappia, niin se voi olla joillekin liian tulinen.

Ranskalaisen salaattikastikkeen valmistaminen on siis erittäin helppoa, mutta jotta saat oman variaatiosi kastikkeesta, niin kerromme miten Stéf tuunaa salaattikastikettaan. Ensinnäkin perusta on laadukkaassa oliiviöljyssä ja Stef vannoo espanjalaisen Omed nimisen neitsytoliiviöljyn nimeen. Tiedän, että on vaikea löytöä Omed öljyjä kaikista kaupoista siksi myymme niitä Ranskalaisella Kyläkaupalla. Sinappina Stef käyttää Domain Terre Rougen valmistamaa perinteistä sinappia, silloin kun hän tekee kastikkeen kotona. Edmont Vallotin sinapit ovat kivellä hienonnettuja ja siksi rakenteeltaan hieman erilaisia kuin Maillen sinapit. Koska kaupalla menee paljon kastiketta, niin siellä Stef käyttää Maillen -sinappia isosta purkista.

Sitten tulee se salaisuuden kruunaava juttu, nimittäin viinietikka. Stefin salaattikastikkeessa käytetään Reimsin viinietikkaa eli champanjaviinietikka. Väriltään tämä viinietikka kellertävää ja läpinäkyvää. Maku taas on hapan, hieman valkoviinimäinen. Ranskalaisella Kyläkaupalla valmistetussa salaattikastikkeessa balsamico on siis korvattu champanjaviinietikalla. Jos et käytä salaattikastiketta ollenkaan, niin kokeile maustaa salaattisi pelkällä oliiviöljyllä ja kaada pari tippaa champanjaviinietikkaa päälle. Saatat kokea yllättävän makuelämyksen.

 

Miten kehitän oman ranskalaisen salaattikastikkeen?

Jokaisella kokikokilla on siis oma salaattikastikereseptinsä Ranskassa. Jos haluat luoda oman erikoisuutesi, niin aloita testaamalla erilaisia viinietikoita ja niiden vaikutusta kastikkeeseen. Myös sherry- ja vadelmaviinietikka tuovat kivaa makua salaattikastikkeeseen. Voit myös sekoittaa paria erilaista viinietikkaa esim. Balsamico ja sherryviinietikka sointuvat kivasti yhteen. Myymme kaupallamme erilaisia viinietikoita, kuten myös champanjaviinietikkaa. Seuraavassa vaiheessa kokeile vaihtaa sinappia tai sekoita kahta erilaista Dijon-sinappia. Esimerkiksi rakuunasinappi on sellainen, jolla saat kastikkeeseen vielä lisäpotkua ja hunaja-balsamico sinapilla saat lisää pehmeyttä. Ranskalaisesta Kyläkaupasta löytyy runsaasti myös erilaisia sinappeja.

Voit myös varioida salaattikastikettasi lisäämällä mukaan erilaisia mausteita, kuten rakuunaa, provencen yrttejä tai basilikaa. Muista, että oman salaattikastikkeen kehittämisessä rajanasi on vain mielikuvitus. Ja jos et jaksa tehdä itse salaattikastiketta, niin aina voit poiketa Ranskalaiselle Kyläkaupalle syömään salaatin, jossa on Stefin valmistamaa ranskalaista salaattikastiketta.

 

 

Ranskalaisen salaattikastikkeen ainesosat

  • Neitsytoliiviöljy
  • Viinietikka
  • Dijon -sinappi
  • Suola
  • Pippuri

Lisää ensin kulhoon oliiviöljyä 6 rl, sen jälkeen 1 rl Dijon-sinappia ja 1 tl viinietikkaa. Sekoita ainekset hyvin lusikalla tai haarukalla, kunnes seos on yhtenäinen Voit varioida salaattikastiketta käyttämällä erilaisia öljyjä, viinietikoita ja sinappeja. Stef käyttää kyläkaupalla valkovinietikkaa salaattikastikkeessa sekä perinteisestä Dijon -sinappia.

Ranskalaisen salaattikastikkeen valmistaminen kestää vain noin 5 minuuttia ja kokeneemmalla kokilla 2 minuuttia. Muista seisottaa kastiketta hetki ennen tarjoilua.
